Grape Variety Barbera d’Asti
Preparation: Grapes are crushed, de-stemmed and slowly fermented on skins. Refined in oak barrels for at least 12 months. Light settling and bottling in the summer season. Aged in bottles for at least one year before being released for sale.
Characteristics: Intense ruby red color with slightly garnet hues. Complex and well balanced bouquet, fruity with spicy influences. Well structured wine, rich in taste.
Aging: Suitable for very long aging (over 10 years).
Food Pairing Suggestions: Grilled or roasted red meats, all types of game, cheese that is not overly ripe or strong.

Aging: Highly suitable for aging periods of five years or more.
Food Pairing Suggestions: This is a wine for the entire meal, though it is best with pasta, meats with sauces, and cheese that is not overly ripe.

Preparation: Grapes are collected and transported to the cellars in small boxes. The berries are then gently crushed and slowly fermented on skins. The young wine matures in French oak barrels for at least 12 months. Bottling takes place in autumn of the second year, then the wine settles in the bottles for one more year.
Characteristics: Distinctive deep ruby colour; refined bouquet, complex and intense with a blend of voilet and cranberry favours. This wine’s rich and velvety body has an aristocratic structure.
Aging: This wine is suitable for very long aging (over ten years).
Food Pairing Suggestions: Main courses, rich red meats, savoury cheeses though not too spicy.
Serving Temperature: 18 degrees Centigrade (64 degrees Fahrenheit) in a large crystal glass.
