The wine storage

Freshly bottled wines as soon as possible to provide at its future location. The cork should be saturated with wine (hence flat storage), it remains constantly moist inside and closes well. For this reason, all the wines (including champagne) is absolutely lying to store. Actual bottled wines reach only after several months or several years of storage their full maturity.

The bottle storage of natural light may not be exposed to the action and all, no big changes in temperature have before. No alarm at Jean-Daniel Giauque

NeuvevillePassage yesterday unexpectedly at Jean-Daniel Giauque, the field of Signolet, The Neuveville. Traditionally, local wineries are open two or three hours on Friday afternoon and Saturday morning. I did not risk disturbing. The man is there, the phone in front of his cellar. This seems a good start.

He prepares his cellar open operation (which starts in less than an hour), responds to telephone calls, bottled a wine with his staff. I leave the office and told him that I’m going to take some photos in the town and pass again later.

Open Cellars in Vully (2 / 2)

Very warm welcome Chautems Francis and his son. I have not tasted the full range of wines, because I wanted to arrive on time in the cellar below. Bad luck for the cellar Chambaz, because Christian Vessaz, Cru Hospital played overtime before the crowd arrived home at the time of closing.

Chasselas Two: The Cotelines In Chambaz and selection:

The Cotelines 2009: A fresh wine, fruity with good length, ideal for an aperitif. Nicely balanced palate. Beloved.

In Chambaz: A slightly more discreet fruity nose, mouth but a denser structure, and most importantly, an additional fine wine that offers a great nobility. Nice length. Much appreciated.

Korkmotte – The enemy in the wine cellar

korkmotteThere is a not so rare but still relatively unknown enemy in the wine cellar, the Korkmotte (Nemapogon cloacellus “). The caterpillars of these moths are also called Korkwurm. The Korkmotte lays its eggs in moist places like the cellar, especially at the cork. The moth is 7.5 mm long with a wingspan of 10 to 14 mm.

How to recognize the Korkmotte?

One can recognize the attack on the cork or to Korkbrösel eroded under the capsule or on the ground. Sometimes there are also direct the caterpillars of the moth on the cork.

How wines are best stored?

Yorkville Cellars, Mendocino County

cellarEven though Edward and Debbie Wallo had traveled and lived in the San Francisco Bay Area for several years, they had never visited Mendocino County until one day in 1988 when they went wine tasting in Yorkville (Population 25). When the heard that the property was being put up for sale the young couple took a giant step and became the new proprietors of the 110-acre piece of land that included 10 acres of organically farmed vineyard. Additional plantings since then have brought the vineyard acreage to a bit over 30.
