It arose partly from the Shah’s, an old-established wine dynasty, and GVS winery on the other hand, which was founded in 1934 in the crisis to help themselves.

We are in conversation with Michael Fuchs, the cellar master of the chess man GVS:

Michael Fox, how would you characterize the Schaffhauser wine?

Specific microclimatic conditions in individual vineyards as well as love and care of the local winemakers allow for the independent care, characterful wines with plenty of fruit and elegance.

For example?

Wines that grow on the Rhine, are very elegant wine with fine fruit distinctive aroma, finesse and gentle at the same time. Contrast, wines from tonbodenhaltigen Klettgau are lush and powerful. They have a good shelf life and are in the third year and velvety smooth. Finally, the iron pile Siblinger a special feature: Thanks weathering limestone soil (gravel edge) and the steep south-west orientation creates a fiery, high-quality Pinot Noir.

The Schaffhausen wine is always better. Why?

We cultivate the vines very carefully. The yield is limited to only 700 grams per square meter of grapes. Thus, the energy of the vine are ideally used for the remaining grapes. In addition, we harvest only healthy, ripe grapes carefully by hand. Further, it is important that new and traditional processing methods are combined properly. Thanks to good wine-making skills can be targeted to specific types of wine vinified, for example, gold seal, wine barrels, etc.

Keyword Vinification: What are the strengths of traditional processing methods?

In the many years of experience. Mr. Weiner arise with regional authenticity. In the foreground are fruit of the vine variety and vitality, especially in Pinot Noir and Riesling x Sylvaner.

And if you compare these methods with global trends?

Today the different vinification methods are among the winemakers no longer a secret. Some findings have influenced our work greatly and wine quality, such as cold fermentation for white wine, the whole bunch pressing for specific varieties or the Tanninmanagement the red wine. Other modern methods, such as the concentration of the musts are now stuck in the experimental stage.

GVS is where the chess man in the quality of their products?

We are ahead as a great wine cellar in the canton of Schaffhausen with it. The white wines impress with its clear profile variety. Among the reds we have in recent years, much work on the lines of wine. Today they show different profiles. Since you live in our basement, the Pinot Noir variety of fascinating ways. Starting with the berry, fruity, “Steiner Chröttli” over the bodied, spicy “Hallauer guilders wine,” the powerful, elegant, round “Gächlingen gold seal,” the fiery, noble “iron Halder Old Vine” to the spicy, dominated entirely by wooden “iron Halder Barrique wine “. We have a high potential to produce professionals with the wine of passion. That is why we always look forward to the new vintage and the challenge to make it even better.
