  • 3 1/2 -4 lb. roaster chicken
  • Fresh herbs (whatever you have in the garden/store/neighborhood)
  • 1 lemon, quartered
  • Garlic cloves, smashed and unpeeled
  • 1 small onion, quartered
  • Dried thyme
  • Salt and pepper

Chicken Cassoulet

Rinse the chicken and stuff with fresh herbs, lemon, garlic, and onion, then place on a rack in a roasting pan. Salt and pepper the skin and sprinkle with dried thyme. Roast at 450-475 degrees for about one hour.

You may be surprised, but this dish is wonderful with the St. Clement Cabernet Sauvignon as well. The dishes you choose to accompany this will have an influence. Remember, whatever wine and food pairing you enjoy must be right, because it tastes good to you!
